
When I think of autumn in all its colorful splendor, I am reminded specifically of scary-movie nights with popcorn, that smoky smell of neighbors’ burning leaves, Halloween chocolates, and gathering pecans along the side of a county road. It is all of these memories that I’ve attempted to assemble together into the following recipe for Cozy Corn, the perfect accompaniment to a chills-and-thrills movie this October.
Cozy Corn
- 1 package microwave popcorn (any kind will do)
- 1 TBSP bacon fat, melted
- 1/2 tsp liquid smoke
- 1/2 cup pecans, finely chopped
- 1/2 cup semisweet chocolate chips
- Halloween-themed sprinkles (optional)
Prepare the popcorn according to the package directions and transfer to a large bowl. Remove any unpopped kernels. Mix the liquid smoke into the bacon fat, then slowly drizzle over the popecorn while gently tossing with a spoon. Immediately sprinkle with the pecans and toss until ingredients are evenly mixed. Pour out onto a large sheet of wax paper and spread into one layer. Melt chocolate in a double-boiler or microwave and drizzle over the popcorn. Top with sprinkles, if desired. Allow to cool thoroughly.
Makes two good-sized portions, or one generous portion.
NOTE: The pecans should be very finely chopped, or ground in a food processor. The idea is to get them fine enough to adhere to the fat on the popcorn, effectively coating each kernel in flavor. If you want some variety in texture, feel free to add in some additional whole or coarsely chopped pecans.
